There is no better way to ensure that I will be extremely grumpy in the morning than being sick for three weeks straight.  Cold bug? Flu? Walking Pneumonia?

I have one of those three and whatever it is, it's made me a vegetable on my couch and not want to leave my apartment once I get home.  Only problem?  I'm moving next week so there's not a lot of food in my apartment...and all I wanted on Sunday morning for breakfast was comfort food, ie pancakes.  Unfortunately, I finished off my Bisquick last weekend. So I googled "easy pancake" recipe and came across this little gem!  Turns out I could make pancakes from ingredients I already had in my cupboard and they were super easy to make!  And delicious too! I just had to share this recipe with you in case you end up with your friends crashed out at your house this weekend or you want to impress your man with some breakfast in bed.  Enjoy! (I recommend a mimosa with these!)

Fluffy Pancakes

Prep Time: 10 Minutes
Cook Time: 10 Minutes
Ready For Your Plate In: 25 Minutes

Ingredients

  • 3/4 Cup Milk
  • 2 Tbs White Vinegar
  • 1 Cup All Purpose Flour
  • 2 Tbs White Sugar
  • 1 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 1 Egg
  • 2 Tbs butter, melted
  • Non-Stick Cooking Spray

Directions

  1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour."  The "sour" milk is a replacement for buttermilk.
  2. Combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl.  Whisk egg and butter into "soured" milk.  Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
  3. Heat a large skillet over medium heat, and coat with cooking spray.  Pour 1/4 cupfuls of batter onto the skillet and cook until bubbles appear on the surface.  Flip with a spatula, and cook until browned on the other side.
