Good news! If you're a Catholic kid like me you're only four more Friday's to make it through without eating meat.  This meal is so good, you won't miss that steak!

A couple summers ago I was on a salmon kick and stumbled across this recipe in the back of Cosmo.  It's been one of my favorite meatless meals ever since and one I'll pull out to impress my man.

We're in a bit of a cooking battle, so I had tried to one up his Parmesan Cilantro Crusted Salmon with these and a side of asparagus.  If you buy the pre-chopped veggies at Albertson's you can have this meal thrown together in no time!

Salmon Cakes

Ingredients

  • 1/2 pound salmon
  • 3 stalks celery, small diced
  • 1 red bell pepper, small diced
  • 1 red onion, small diced
  • 1 clove garlic, minced
  • 1/4 cup parsley, minced
  • 1 cup bread crumbs
  • 2 eggs, lightly beaten
  • salt and pepper
  • olive oil

Directions

  • Pre-heat oven to 350º.  Place salmon skin side down in a baking dish, season with salt and pepper, and let it bake for 15 minutes.  Once it's cool remove the skin, flake it with a fork and set it aside in a medium bowl.
  • In large skillet saute celery, pepper, onion, garlic and parsley in olive oil until tender.  That'll take about 10 minutes.  Let cool and add to salmon.  Add egg and bread crumbs.
  • Shape mixture into eight patties and refrigerate for 30 minutes.
  • Heat a tablespoon of olive oil in a large skillet.  Cook patties for about 3 minutes on each side.  Serve warm with tarter sauce and enjoy!

Roasted Garlic and Parmesan Asparagus

Ingredients

  • Fresh Asparagus Stalks
  • Olive Oil
  • 1 Clove Minced Garlic
  • Grated Parmesan Cheese

Directions

  • Pre-heat oven to 425
  • Wash asparagus stalks thoroughly and snap off dry ends.  Place on bottom of baking pan.
  • Brush asparagus with olive oil.  Sprinkle minced garlic over stalks.
  • Cook for 10-15 minutes.
  • Sprinkle with grated cheese, let cool and enjoy!

I also served my dinner with some tomato Florentine quinoa but that was just something from a box I bought at Albertson's.  Bon Appetite!
